Warm Pumpkin Chia Seed Collagen Protein Pudding

As the weather cools down, we tend to ditch the smoothies and go for warming breakfasts. Spice up a simple chia seed pudding with our best selling Multi Collagen Protein. Our friend, Amanda Elyse, created this high-protein, low-carb recipe that will get you into the fall spirit. Warm Pumpkin Chia Seed Collagen Protein Pudding

Time: 10 minutes + overnights

INGREDIENTS:

  • ½ cup almond milk
  • 2 tbsp chia seeds
  • 1 tbsp ground flax seeds
  • 1 scoop Multi Collagen Protein
  • 2 tbsp canned pumpkin
  • 1 tbsp almond butter
  • 1 tsp Lakanto maple syrup
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ⅛ tsp vanilla extract  

DIRECTIONS:

  1. Add chia seeds, flax, and almond milk to a mason jar – stir and shake well and let sit overnight or ~30 minutes until consistency starts to thicken and gel
  2. Combine gelled chia and flax mixture with all other ingredients in a small saucepan
  3. Stir well over low heat until warm and protein powder is fully mixed in
  4. Serve! Optional to top with pecans and coconut flakes for extra crunch
