Grain-Free Chocolate Banana Mini Muffins

These mini muffins are equally as delicious as they are adorable. Perfect for when you need a quick treat, these health-minded muffins are soon to be your family's favourite. To make things even better, we chose to use paleo-friendly ingredients and one of our favorite products, Multi Collagen Protein - Chocolate. Plus, these only take 30 minutes to make-- perfect for any weekday!

Grain-Free Chocolate Banana Mini Muffins

Serves: 6

Time: 30 minutes

INGREDIENTS:

  • ¼ cup almond flour
  • ¼ cup coconut flour
  • 1 tsp ground cinnamon
  • 2 scoops Multi Collagen Protein - Chocolate
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 ripe bananas, mashed
  • 3 eggs, whisked
  • ¼ cup coconut oil, melted
  • 2 tsp vanilla extract
  • ⅓ cup mini dark chocolate chips

DIRECTIONS:

  1. Preheat oven to 375°F
  2. In a medium bowl, combine all ingredients
  3. Mix until just combined
  4. Pour into lined mini-muffin tin until each cup is about ¾ full
  5. Bake for 10-12 minutes or until centers are firm
  6. Remove from oven and allow to cool for 5 minutes before removing from pan
