To make things even better, we chose to use paleo-friendly ingredients and one of our favorite products, Multi Collagen Protein - Chocolate. Plus, these only take 30 minutes to make-- perfect for any weekday!
Grain-Free Chocolate Banana Mini Muffins
Serves: 6
Time: 30 minutes
INGREDIENTS:
- ¼ cup almond flour
- ¼ cup coconut flour
- 1 tsp ground cinnamon
- 2 scoops Multi Collagen Protein - Chocolate
- ½ tsp baking soda
- ¼ tsp salt
- 2 ripe bananas, mashed
- 3 eggs, whisked
- ¼ cup coconut oil, melted
- 2 tsp vanilla extract
- ⅓ cup mini dark chocolate chips
DIRECTIONS:
- Preheat oven to 375°F
- In a medium bowl, combine all ingredients
- Mix until just combined
- Pour into lined mini-muffin tin until each cup is about ¾ full
- Bake for 10-12 minutes or until centers are firm
- Remove from oven and allow to cool for 5 minutes before removing from pan
